Wine is one of the oldest alcoholic beverages in the world. Scientists have been exploring its origin. In fact, it is difficult to find the clues about wine making. After all, the existence of grape seeds, grape skins and grape stems is not the same as the existence of wine. With the concerted efforts of archaeologists, although there are new discoveries, the origin of wine is a very difficult thing to determine. Even the newly discovered evidence may be overturned by subsequent discoveries.
At present, the earliest record of wine making can be traced back to 9000 BC in China. It's a surprise, isn't it? In other words, wine is probably not imported. Before that, it was widely believed that wine originated in Europe and even central and Western Asia. The discovery of Jiahu Site in Henan province changed this prejudice. After numerous long-term studies, scientists finally determined that tartaric acid, rice, honey, hawthorn, grape and other ingredients were contained in the sediment on the inner wall of the pottery unearthed from the Jiahu Site. Combined with other traces of wine making, scientists believe that in the early Neolithic period, the people of Jiahu had begun to brew and drink fermented wine.

In the face of this problem, I believe you will look scornful. Who doesn't know? It's true that many people know what wine is, but it's necessary for us to make a clear definition of wine.
According to the regulations of international organization of grape and wine in 1996, wine is an alcoholic beverage made from broken or unbroken fresh grape fruit or grape juice and fermented completely or partially with alcohol. Generally, the alcohol content ranges from 8.5% to 16.2%. Of course, according to specific factors such as climate, soil conditions, grape varieties and regional traditions, the alcohol level of some wines may also be lower than 7%.
According to the provisions of gb15037-2006, wine is made from fresh grape or grape juice and fermented in whole or in part, which contains a certain degree of alcohol accuracy.
In addition, the definition in the Oxford Companion to wine written by Jancis Robinson is very simple. Wine is an alcoholic beverage fermented by grape juice.
It can be seen that the above definitions do not limit the variety of grapes, but generally speaking, wine is usually made from wine grapes, and fresh grapes are seldom used to make wine.
